The knobs are probably just a very tight fit, and there may be enough corrosion to make it even harder to remove them. The setscrews are all that holds them on (at least on the B2, and I think also on your C). Try something made of rubber, or wiggling the knobs on their shafts, carefully.

Removing the bottom plate inside the camera will allow you to take out the film takeup spool, which should allow you to get a purchase on the end of the wind shaft.
