Taking off the top cover from 1976 Canon F1 Montreal is hardened by the little top of the Shutter Dial, any suggestions how to get this off without any dammage to the knob and camera?

Don't worry about that little piece, it's just glued on. Place a blade under the edge and ease it off. Reglue it with a spot of contact cement.
